Step into the magic of Christmas where the Roux family’s passion for excellence meets the joy of the festive season. Under the expert guidance of Chef Instructor, Michael Nizzero, you will prepare an elegant festive feast befitting of the finest table. So much more than a cookery class, this is your chance to embrace the precision, skills, traditions and innovative techniques that define Roux hospitality. You will leave with some of the dishes you have prepared, along with cherished memories of a wonderful festive experience.
What you will make:
• Canapés: Confit duck croquette with orange emulsion
• Smoked salmon parcel Claudine with crème fraiche dressing and lamb’s lettuce
• Turkey ballotine with brussels sprouts and chestnuts, mushroom sauce and fondant potato
• Chocolate fondant with Baileys crème anglaise and maraschino cherries
