Our meat BBQ classes have been such a hit, we now bring you the ‘fish & shellfish over fire’ experience. Learn how to transform simple summer grilling into lively, flavour-packed seafood dishes, using the mighty Big Green Egg BBQ. Led by Chef Instructor Michael Nizzero, this fun and immersive class explores the sophisticated side of the BBQ as he guides you through expert fish preparation, flavour-balanced marinades, heat control and precise grilling techniques. Enjoy in our riverside garden in the beautiful grounds of The Waterside Inn.

What you will create:

  • Marinated mackerel with miso, mirin and honey
  • Chargrilled prawn with almond parsley and garlic butter
  • Barbecued salmon and fennel dry rub with Bois boudran sauce

Garnishes:

  • Carrot & white cabbage, peanuts and lime coleslaw
  • Fattoush salad

What To Wear
